Yeah, there is a ton of docs on it. I've finally memorized just the handful of commands that I use all the time.
  -u: update
  -D: update all package dependencies as well
  -a: ask before actually emerging.

Another good USE flag is "nsplugin" which will install the appropriate files for some programs (mplayer,acroread...) to be used as plugins in netscape-compatible browsers (mozilla,firefox,etc).
