Sawfish has a command called "Iconify Workspace Windows".  It's not
bound to anything by default.

Open the Control Center, find Sawfish window manager Shortcuts
and build yourself a key binding for it.

I think you'll actually need to restart the window manager for it
to take effect. (boo)
