You should still be able to execute /usr/sbin/sendmail to connect to outgoing port 25. Remember that the sendmail *daemon* only *listens* on port 25. The same should be true for the Domino server. You can possibly tell whatever is sending the Emails to connect to port 25 on localhost or it can run a sendmail process to send something. I think I need more details about where you're trying to send the logs.
