With spam assassin you can use SARE to pull in some more rule sets:

You should also setup spamassassin to use DCC and Razor (I recommend if
you want to go one step farther with Razor and don't mind paying go for
the commercial version for SMB

And last but not least, you should setup spamassassin to store bayes
information, probably the best would be in a Mysql DB, and use horde to
fire up sa-learn

spam message into the bayes db.
