Sorta the places you'd expect it to be:
http://www.xen.org (the wiki and the manual)

The list can go on forever.  Xen.org gives an overview, the oracle wiki
is very enterprise-y (good tutorial on device multipathing, etc), and
centos has some general usefulness.

Also, each Xen value-adder (Citrix, Redhat Virtualization, VirtualIron,
Oracle VM) has their own documentation set that isn't bad to skim
through.
