Well I think your paradigm is backwards.  Server would have as LITTLE
AS POSSIBLE in it,  hence, no X, minimalistic to the max (only what you
need on a server, good mindset for security)

Desktop folks are the one's who want everything and the kitchen sink.

before.  Bummer.  Might benefit from taking a handful of chill pills (a
6 pack works best for me) and cruising the debian or ubuntu forums.
